Herbed Sausage with Garlic Mashed Potatoes and Balsamic Kale recipe


This is a yummy dinner with herby sausages, creamy garlic mashed potatoes, and a tangy kale salad. The sausages are cooked in a tasty onion gravy. It's a warm, filling meal that makes you feel happy.


4 pork sausages
16 fl oz chicken or vegetable broth
1 medium red onion, thinly sliced
2 tbsp all-purpose flour
1/2 tsp dried rosemary
1/2 tsp dried sage
4 medium yellow potatoes, peeled and diced
2 cloves garlic, minced
4 tbsp unsalted butter
1/2 tsp salt
1/4 tsp black pepper
1 bunch kale, stems removed and leaves chopped
1 tbsp balsamic vinegar
1 tbsp olive oil
1/2 pint grape tomatoes, halved


Wash and dry the fresh produce.
Place diced potatoes and minced garlic in a large pot, cover with water, and bring to a boil. Reduce heat to simmer and cook until potatoes are soft, about 15 minutes.
While potatoes cook, heat a skillet over medium-high heat. Add sausages and cook until golden, about 5 minutes. Transfer to a plate.
In the same skillet, add 2 tbsp butter and the sliced onions. Cook, stirring, until softened, about 3 minutes.
Sprinkle flour, rosemary, and sage over onions. Cook, stirring, until golden, about 1 minute.
Slowly stir in broth, bring to a simmer, and return sausages to the skillet. Reduce heat to low, cover, and cook until sausages are done and gravy has thickened, about 10 minutes.
Drain potatoes and return to the pot. Add remaining 2 tbsp butter, salt, and pepper. Mash until smooth.
In a bowl, whisk together balsamic vinegar, olive oil, and a pinch of salt to make the dressing.
Add kale and tomatoes to the dressing. Toss to combine.
Serve the sausages and onion gravy over the garlic mashed potatoes with the kale salad on the side.
