Herbed Salmon Patties with Lemon Yogurt Sauce & Mixed Greens recipe

This recipe is for delicious salmon patties with herbs. They are served with a tangy lemon yogurt sauce. You also get a fresh mixed greens salad with a light vinaigrette. It's a yummy meal that's good for you!

Ingredients

2 x (7 1/2 oz) cans wild pink salmon, drained
1/4 cup whole wheat bread crumbs
2 tbsp chopped fresh dill
1/4 cup Greek yogurt
1 lemon, zest and juice
1 tbsp olive oil
1/2 tsp salt
1/4 tsp black pepper
1 tbsp chopped capers
1 large egg
4 cups mixed greens
1 tbsp balsamic vinegar
1 tsp honey
1/4 cup sliced almonds
4 multigrain buns

Method

In a bowl, mix together the drained salmon, bread crumbs, chopped dill, egg, salt, and pepper until well combined.

Form the mixture into 4 equal-sized patties and set aside on a plate.

In a small bowl, combine Greek yogurt, lemon zest, lemon juice, and chopped capers to make the lemon yogurt sauce. Set aside.

In another bowl, whisk together olive oil, balsamic vinegar, honey, salt, and pepper to create a dressing for the salad.

Toss the mixed greens and sliced almonds with the dressing until evenly coated. Set aside.

Heat a non-stick skillet over medium heat and add a little oil. Cook the salmon patties for about 5 minutes on each side, until browned and heated through.

Toast the multigrain buns if desired.

To assemble, spread a generous amount of lemon yogurt sauce on the bottom half of each bun, add a salmon patty, and top with the other half of the bun.

Serve the herbed salmon patties with the dressed mixed greens salad on the side.
