Herbed Salmon Patties with Citrus Yogurt Sauce recipe

These salmon patties are made with fresh salmon and herbs, cooked until golden. They're served with a tangy citrus yogurt sauce on soft buns. It's a yummy meal that's fun to eat!

4 Tbsp Greek yogurt
1 Tbsp honey
1 Tbsp lemon juice
4 Fillets Sockeye Salmon
60 g Panko Breadcrumbs
1 Tsp Dried Dill
1 Tsp Paprika
4 Whole Wheat Buns
1 Avocado
1 Tbsp Olive oil
1 Tsp Lemon zest
1 Tsp Apple cider vinegar
A handful of fresh parsley, chopped

First, make the citrus yogurt sauce by mixing together Greek yogurt, honey, lemon juice, and lemon zest in a bowl. Place it in the fridge to chill.
For the salmon patties, remove the skin from the salmon fillets and chop them into small pieces. Place the salmon in a large mixing bowl.
Add Panko breadcrumbs, dried dill, paprika, and chopped parsley to the salmon. Mix well until you can form four firm patties.
Heat olive oil in a pan over medium heat. Cook the patties for about 5 minutes on each side or until they are golden and cooked through.
While the patties are cooking, cut the avocado into slices and drizzle with apple cider vinegar.
Toast the whole wheat buns lightly on the pan or in a toaster.
To assemble the burgers, spread a generous amount of the citrus yogurt sauce on the bottom bun, place a salmon patty on top, add avocado slices, and cover with the top bun.
Serve the herbed salmon patties with any extra citrus yogurt sauce on the side for dipping.
