These are yummy fish burgers made with fresh salmon and herbs. They are cooked until golden and served with a tasty salad. The burgers are put on toasted buns with a special sauce.

Ingredients

4 tablespoons chopped fresh dill
1 tablespoon grated lemon zest
1 pound salmon fillet, skin removed
1/2 cup panko bread crumbs
1/4 cup finely chopped red onion
2 tablespoons Dijon mustard
1/2 teaspoon salt
1/4 teaspoon black pepper
2 tablespoons olive oil
4 whole wheat buns
4 tablespoons Greek yogurt
1 tablespoon capers, drained
4 cups arugula
1 tablespoon balsamic vinegar
1 tablespoon extra virgin olive oil
1/2 teaspoon honey
1/4 teaspoon salt
1/8 teaspoon black pepper
1 avocado, sliced

In a large bowl, combine the chopped dill, lemon zest, and red onion.

Cut the salmon into small cubes and add to the bowl with the dill mixture.

Add panko bread crumbs, Dijon mustard, 1/2 teaspoon salt, and 1/4 teaspoon black pepper to the salmon mixture. Mix until well combined and form into 4 equal-sized patties.

Heat olive oil in a non-stick skillet over medium heat. Cook the salmon patties for about 4 minutes on each side, or until golden and cooked through.

While the patties cook, toast the whole wheat buns.

In a small bowl, mix Greek yogurt and capers to create a creamy caper sauce.

In another bowl, whisk together balsamic vinegar, extra virgin olive oil, honey, 1/4 teaspoon salt, and 1/8 teaspoon black pepper to make the salad dressing.

Toss the arugula with the dressing until evenly coated.

Spread the creamy caper sauce on the bottom half of each toasted bun, place a salmon patty on top, and add a few slices of avocado.

Serve the salmon burgers with the dressed arugula salad on the side.
