This is a yummy dinner with juicy pork sausages, sweet caramelized onions, and a smooth apple-infused potato mash. It's a warm, comforting meal that's perfect for a cozy night in. You cook the sausages and mash the potatoes with apples to make it all soft and tasty.

Ingredients

5 Granny Smith apples
8 pork sausages
5 medium yellow potatoes
1/4 teaspoon black pepper
2 tablespoons butter, unsalted
1 tablespoon extra virgin olive oil
1/2 teaspoon salt
1 large yellow onion
1 teaspoon dried thyme
1/4 cup chicken broth

Method

Wash and dry the fresh produce. Peel the potatoes, then cut into even chunks. Place them in a saucepan, cover with water by about 1 inch, and bring to a boil over high heat.

While the potatoes are cooking, slice the onion thinly. Heat 1 tablespoon of olive oil in a skillet over medium heat. Add the onions and cook, stirring occasionally, until they are caramelized, about 15 minutes.

Quarter the apples, remove the cores, and cut into small chunks. Add the apples to the onions in the last 5 minutes of cooking, along with the dried thyme and chicken broth. Cook until the apples are soft.

Once the potatoes are tender, about 15 minutes, reserve 1 cup of the cooking liquid, then drain the potatoes. Return them to the pot, add the apple and onion mixture, butter, salt, and pepper. Mash until smooth, adding reserved liquid as needed for consistency.

In another skillet, preheat over medium heat. Rub the sausages with a bit of olive oil and cook them, turning occasionally, until browned and cooked through, about 15 minutes. Transfer to a plate and cover with foil to keep warm.

To serve, divide the herbed apple mash among plates, top with the sausages, and spoon over some of the caramelized onions. Enjoy your hearty meal!
