Herbed Pork Chops with Spicy Tomato Sauce and Garlic Spinach Mash recipe

This dish has juicy pork chops in a spicy tomato sauce. It comes with a tasty spinach and garlic mash. You cook the pork in a pan and make the sauce. Then you mash beans with spinach for a yummy side.

Ingredients

4 (6 oz) pork loin chops
1 (15 oz) can cannellini beans
1 (14 1/2 oz) can diced tomatoes with green chilies
1 small bunch fresh thyme
4 cups fresh spinach
4 cloves garlic
1 orange
1/2 tsp red pepper flakes
1/2 tsp black pepper
1/2 tsp salt
2 tbsp olive oil

Method

Season pork chops with salt and black pepper.

Heat 1 tablespoon of olive oil in a sauté pan over medium-high heat. Add pork chops and cook until browned, about 3-4 minutes per side. Remove and set aside.

Wash thyme and pick leaves off the stems. Peel and mince 2 cloves of garlic.

In the same pan, add another tablespoon of olive oil, half of the thyme, minced garlic, and red pepper flakes. Cook until fragrant, about 1 minute.

Stir in the diced tomatoes with green chilies. Bring to a boil, then reduce heat to a simmer for 3 minutes.

Return pork chops to the pan, cover, and cook in the sauce until fully cooked through, about 6-8 minutes.

While pork is cooking, heat a medium saucepan over medium heat. Add spinach and cook until wilted, about 2-3 minutes. Remove from heat.

Grate 1 tsp of orange zest and squeeze 2 tbsp of orange juice. Drain and rinse beans; pat dry.

In a bowl, combine beans, cooked spinach, remaining thyme, orange zest, orange juice, and remaining 2 cloves of minced garlic. Mash until smooth and season with salt and pepper to taste.

Serve the herbed pork chops with the spicy tomato sauce and a side of garlic spinach mash.
