This is a yummy dinner with juicy pork chops and a fresh apple-celery slaw. The pork is seasoned with herbs and the slaw has a tangy dressing. It's a meal that's both tasty and healthy!

Ingredients

4 boneless pork chops
1 tablespoon olive oil
1 teaspoon dried thyme
1 teaspoon garlic powder
Salt and black pepper to taste
2 Gala apples
3 sticks celery
1/2 cup plain Greek yogurt
1 tablespoon Dijon mustard
1 tablespoon honey
Juice of 1 lemon
1/2 cup dried cranberries
1/2 cup sliced almonds

Preheat your oven to 375°F (190°C).

Rub the pork chops with olive oil, thyme, garlic powder, salt, and pepper.

Place the seasoned pork chops in a baking dish and bake for 20 minutes or until cooked through.

While the pork chops are baking, core and thinly slice the apples. Thinly slice the celery.

In a large bowl, whisk together Greek yogurt, Dijon mustard, honey, lemon juice, salt, and pepper to create the dressing.

Add the sliced apples, celery, dried cranberries, and sliced almonds to the bowl with the dressing and toss to coat.

Once the pork chops are done, let them rest for a few minutes.
