Herbed Lemon Garlic Salmon in Puff Pastry recipe

This recipe is for a delicious fish dish wrapped in a flaky crust. We use salmon, lemon, garlic, and herbs, all wrapped in puff pastry. It's cooked until golden and served with a tangy yogurt sauce. It's a fancy meal that's easy to make!

Ingredients

4 spring onions, finely chopped
10 cm piece of ginger, minced
4 pieces of 150 g salmon fillet
3 tbsp soy sauce
2 tbsp honey
1/4 cup fresh dill, chopped
4 cloves of garlic, minced
1/4 cup fresh basil, chopped
1 lemon, zest and juice
250 g puff pastry
2 tbsp olive oil
1/2 cup Greek yogurt
1 tbsp Dijon mustard

Method

Preheat your oven to 200°C (400°F).

In a small bowl, create a marinade by combining the soy sauce, honey, 1/3 of the chopped spring onions, 1/3 of the minced ginger, and the lemon zest.

Place the salmon fillets in the marinade and let them sit for 10 minutes.

Roll out the puff pastry and cut into four equal squares.

Place a marinated salmon fillet in the center of each pastry square.

Mix the remaining spring onions, ginger, dill, basil, and garlic in a bowl.

Spoon the herb mixture on top of each salmon fillet.

Fold the pastry over the salmon to create a parcel, sealing the edges with a fork.

Brush each parcel with olive oil and place on a baking sheet.

Bake in the preheated oven for 20-25 minutes, or until the pastry is golden brown.

While the salmon bakes, mix the Greek yogurt, Dijon mustard, and lemon juice in a small bowl to create a sauce.

Serve the baked salmon parcels with a dollop of the yogurt sauce.
