Herbed Lemon Garlic Potatoes Recipe

This is a yummy potato dish with a zesty twist. We use potatoes, garlic, and herbs to make it. It's cooked until golden and crispy. You can eat it with fish or by itself. It's a fun dish to make and share!

Ingredients

1 kg Potatoes
1 Yellow Bell Pepper
4 Cloves of Garlic
1/2 Bunch of Parsley
1/2 Bunch of Mint
1 Lemon
1 Tbsp Paprika
3 Tbsp Olive Oil
Salt to taste

Method

Peel and dice the potatoes into roughly one-inch cubes. Parboil in salted boiling water for about 7 mins until just starting to soften. Drain and set aside to steam dry.

While the potatoes are parboiling, finely chop the yellow bell pepper, mince the garlic, and chop the parsley and mint.

Heat 3 tablespoons of olive oil in a large frying pan over medium heat. Add the chopped bell pepper and sauté for about 5 minutes until softened.

Add the minced garlic to the pan and cook for another 2 minutes, stirring frequently to prevent burning.

Stir in the paprika and cook for 1 minute to release its flavor.

Increase the heat to medium-high and add the parboiled potatoes to the pan. Fry for 8 to 10 minutes, turning occasionally, until the potatoes are golden and crispy.

Remove the pan from heat and stir in the chopped parsley and mint. Squeeze the juice of one lemon over the potatoes and toss to coat evenly.

Season with salt to taste and serve hot as a delicious side dish or part of a meal spread.
