Herbed Goat Cheese with Balsamic Roasted Tomatoes recipe

This is a yummy dish with soft goat cheese mixed with herbs. We roast little red tomatoes with sweet balsamic. You eat it with good bread. It's fun to make and eat!

Ingredients

200 g goat cheese
3 Tbsp cream cheese
1 Tbsp maple syrup
1/2 Tsp dried basil
1/2 Tsp dried thyme
Juice and zest of 1/2 lemon
2 Tbsp olive oil
500 g grape tomatoes
1 Tbsp balsamic vinegar
3 cloves of garlic, minced
1 Tbsp fresh rosemary, chopped
Salt and pepper to taste
Crusty bread for serving

Method

Preheat your oven to 180°C (350°F).

In a bowl, mix the grape tomatoes with balsamic vinegar, minced garlic, chopped rosemary, and 1 tablespoon of olive oil. Season with salt and pepper.

Spread the tomatoes on a baking sheet and roast in the oven for 40 minutes until they are soft and caramelized.

While the tomatoes are roasting, blend the goat cheese, cream cheese, maple syrup, dried basil, dried thyme, lemon juice, and zest with 1 tablespoon of olive oil in a food processor until the mixture is smooth and creamy.

Transfer the whipped goat cheese to a serving dish and smooth the top with a spatula.

Once the tomatoes are done, let them cool for a few minutes.

Spoon the warm roasted tomatoes over the whipped goat cheese.

Serve with slices of crusty bread for dipping.
