This is a yummy snack made with big green olives filled with creamy goat cheese. They are rolled in a crunchy coating and fried until golden. It's a fun food that looks fancy but is easy to make!

Ingredients

150 g goat cheese
1 tsp smoked paprika
2 tbsp fresh parsley, finely chopped
30 g panko breadcrumbs
2 large eggs
50 g all-purpose flour
300 g large pitted green olives
1 L sunflower oil (for frying)
1 tsp garlic powder

Method

1
In a bowl, mix together the goat cheese, smoked paprika, 1 tablespoon of chopped parsley, and a pinch of salt until well combined.
2
Transfer the cheese mixture into a piping bag with a small nozzle. Carefully pipe the mixture into the cavity of each olive, filling it up.
3
In a small bowl, combine the panko breadcrumbs, remaining 1 tablespoon of chopped parsley, garlic powder, and a pinch of salt.
4
Crack the eggs into another bowl and beat them.
5
Place the flour in a separate bowl.
6
Coat each stuffed olive in flour, shaking off the excess. Dip into the beaten eggs, then roll in the breadcrumb mixture until fully coated. For extra crunch, dip again into the eggs and then into the breadcrumbs.
7
Set the breaded olives aside on a plate.
8
Heat the sunflower oil in a deep pan over medium-high heat until it reaches approximately 180°C (356°F).
9
Fry the olives in batches for about 5 minutes or until they are golden brown and crispy.
10
Remove the olives with a slotted spoon and drain on a plate lined with paper towels. Sprinkle with a little salt.
11
Let the olives cool for a minute before serving. Enjoy as a delicious appetizer!
