Herbed Goat Cheese and Roasted Pepper Bruschetta recipe

This recipe is for a yummy toast with soft goat cheese and sweet roasted peppers. You cook peppers and spread cheese on bread. It's a tasty snack or appetizer that's easy to make!

Ingredients

300 g Red Bell Peppers
200 g Goat Cheese
1 Baguette
2 Tbsp Balsamic Vinegar
2 Tbsp Olive Oil
1 Tbsp Honey
1/2 tsp Salt
1/4 tsp Black Pepper
1 Tbsp Fresh Oregano, chopped
1 Tbsp Fresh Basil, chopped

Method

Preheat your oven to 220°C (425°F).

Cut the bell peppers into quarters, removing the seeds and stems.

Place the peppers on a baking sheet, drizzle with 1 tablespoon of olive oil, and sprinkle with salt.

Roast the peppers in the oven for 20 minutes or until the skins are charred and the peppers are soft.

Remove the peppers from the oven and place them in a bowl. Cover the bowl with plastic wrap and let it sit for 10 minutes. This will make it easier to peel the skins off.

Peel the skins off the roasted peppers and cut them into strips.

In a small bowl, whisk together the balsamic vinegar, honey, remaining olive oil, salt, and pepper to create a dressing.

Toss the roasted pepper strips in the dressing and add the chopped oregano and basil.

Slice the baguette diagonally into 1/2 inch thick slices.

Toast the baguette slices in a toaster or oven until they are golden brown.

Spread the goat cheese evenly on the toasted baguette slices.

Top each slice with a spoonful of the herbed roasted pepper mixture.
