Herbed Focaccia with Balsamic Tomato Topping recipe

This is a yummy toast with tomatoes, cheese, and herbs. It's crispy and has a sweet and tangy taste. You cook garlic and onion, then add tomatoes and vinegar. Put it on bread with cheese and cook it until it's crispy. It's good for a snack or a light meal.

Ingredients

4 large garlic cloves
1 small red onion
400 g grape tomatoes
1 large focaccia bread
60 g Parmesan cheese
2 Tbsp balsamic vinegar
30 g fresh parsley
30 g fresh oregano
Extra virgin olive oil
Salt to taste
Black pepper to taste

Method

Turn on the oven's broiler to high.

Slice the garlic cloves thinly and chop the red onion. Place them in a pan with a generous amount of olive oil over medium heat. Cook until they are golden and crispy, about 8-10 minutes.

While the garlic and onion cook, slice the grape tomatoes in half. Set aside.

Cut the focaccia into 4 equal pieces and lightly brush with olive oil. Grate the Parmesan cheese and sprinkle half of it over the focaccia pieces.

Place the focaccia under the broiler until the cheese melts and the edges are golden brown, about 5 minutes.

Remove the crispy garlic and onion from the pan and set aside. Add the halved tomatoes to the pan, season with salt and pepper, and cook for 2 minutes.

Stir in the balsamic vinegar and cook for another minute. Remove from heat and mix in the chopped parsley and oregano.

Place the broiled focaccia on plates, spoon the balsamic tomato mixture on top, and garnish with the crispy garlic and onion.

Finish by sprinkling the remaining Parmesan cheese over the toasts and serve immediately.
