Herbed Chicken Salad with Lemon-Tahini Dressing recipe

This is a yummy salad with chicken and fresh herbs. It has a special sauce made from tahini and lemon. You mix everything together and put crispy onions on top. It's good for lunch or dinner.

Ingredients

1 bunch of cilantro
1 bunch of basil
120 g tahini
30 ml extra virgin olive oil
1 large lemon
120 ml water
1 Tbsp sumac
500 g boneless chicken breast
2 romaine hearts
2 medium zucchinis
40 g fried onions
Salt to taste

Method

Preheat a grill pan over medium-high heat.

Season the chicken breasts with salt and sumac.

Grill the chicken for about 6-7 minutes on each side until fully cooked. Let it rest for 10 minutes, then cut into strips.

Wash the romaine hearts and chop them into bite-sized pieces.

Slice the zucchinis thinly, preferably with a mandoline slicer.

In a blender, combine the cilantro, basil, tahini, juice of the lemon, extra virgin olive oil, water, and a pinch of salt. Blend until smooth to create the dressing.

In a large bowl, toss the romaine lettuce and zucchini with half of the dressing.

Add the grilled chicken to the salad and drizzle with the remaining dressing.

Garnish the salad with fried onions before serving.
