Herbed Chicken Burger with Crispy Feta recipe

This is a yummy chicken burger with a crispy feta cheese inside. It has a soft bun and is filled with grilled chicken, tomatoes, and tasty sauces. It's fun to make and eat!

Ingredients

200 g Feta cheese
40 g All-purpose flour
1 Large egg
50 g Panko breadcrumbs
1 Large chicken breast, halved and flattened
4 Burger buns
4 Tbsp Greek yogurt
1 Tbsp Honey
1 Tbsp Olive oil
1/2 tsp Sea salt
1/4 tsp Black pepper
1 Tomato, sliced into 4 rounds
1/2 Cucumber, thinly sliced
4 Lettuce leaves
1 Tbsp Fresh oregano, chopped
1 Tbsp Fresh mint, chopped
1 Lemon, juiced

Method

Start by preparing the feta. Pat it dry with paper towels. Mix the flour with a pinch of salt and pepper in a bowl. Beat the egg in another bowl, and place the breadcrumbs in a third bowl. Coat the feta in the flour, dip into the egg, then press into the breadcrumbs until fully covered. Set aside.

Season the chicken breasts with salt, pepper, and half of the lemon juice. Grill the chicken in a pan with a bit of olive oil over medium heat for about 5 minutes on each side, until cooked through and golden.

In a small bowl, mix the Greek yogurt, honey, remaining lemon juice, oregano, and mint to make a herby yogurt sauce.

Toast the burger buns in a dry pan until lightly golden.

In the same pan, add a tablespoon of olive oil and cook the breaded feta for 4 minutes on each side until golden and crispy.

To build the burger, spread the herby yogurt sauce on the bottom bun. Add a lettuce leaf, a slice of tomato, some cucumber slices, the grilled chicken, and finally the crispy feta. Top with the other half of the bun.

Serve immediately while the feta is still warm and crispy.
