Herbed Chicken and Vegetable Bake recipe


This is a yummy dish with chicken and veggies all cooked together. It has chicken, tomatoes, and lots of herbs. You put it in the oven and it comes out tasty and ready to eat!


4 boneless, skinless chicken breasts
1 tablespoon olive oil
1 teaspoon dried oregano
1 teaspoon dried thyme
1 yellow onion, diced
2 cloves garlic, minced
1 large red bell pepper, sliced
1 large yellow bell pepper, sliced
2 medium zucchini, sliced
1 can (14.5 ounces) diced tomatoes, drained
Salt and pepper to taste


Preheat your oven to 375°F (190°C).
Place the chicken breasts in a large baking dish and drizzle with olive oil.
Season the chicken with salt, pepper, oregano, and thyme.
Add the diced onion, minced garlic, sliced bell peppers, and zucchini around and on top of the chicken.
Spread the drained diced tomatoes over the vegetables and chicken.
Bake in the preheated oven for 50 minutes, or until the chicken is cooked through and the vegetables are tender.
Serve hot, garnished with additional herbs if desired.
