Herbed Beef Burger with Chipotle Mayo & Bell Pepper Zucchini Stir-Fry recipe


This is a yummy beef burger with herbs mixed into the meat. It has a spicy mayo sauce and is served with zucchini and bell pepper. You make the burger and cook the veggies in a pan. It's a fun dinner!


2 small bunches of cilantro, leaves minced
2 cloves of garlic, minced
1 red bell pepper, seeded and diced
680 grams of lean ground beef
1 lime, juiced
1 bunch of radishes, thinly sliced
1 medium red onion, thinly sliced
4 whole grain buns or rolls
4 medium zucchini squash, cut into 1/4-inch thick half-moons
1/2 teaspoon of black pepper
2 tablespoons of chipotle sauce
2 tablespoons of extra virgin olive oil
4 tablespoons of mayonnaise
3/4 teaspoon of salt


Wash and dry the cilantro, radishes, red bell pepper, and zucchini.
In a large bowl, mix the minced cilantro leaves with the ground beef, 1/2 teaspoon of salt, and 1/4 teaspoon of black pepper. Form into 4 equal-sized patties and set aside on a plate.
Preheat a skillet over medium-high heat. In a small bowl, combine the mayonnaise and chipotle sauce to make the chipotle mayo.
Add 1 tablespoon of olive oil to the hot skillet and cook the burger patties for 5 minutes on one side. Flip and cook for another 3 minutes or until done to your liking. Transfer to a plate and cover with foil.
In the same skillet, add the remaining olive oil, red onion, and garlic. Cook for 1 minute until fragrant.
Add the zucchini and red bell pepper to the skillet. Season with the remaining salt and pepper. Cook, stirring occasionally, for about 5 minutes or until the vegetables are tender.
Squeeze the lime juice over the cooked vegetables and stir to combine. Remove from heat.
If desired, toast the buns. Spread the bottom half of each bun with the chipotle mayo, add a burger patty, top with sliced radishes, and a sprinkle of cilantro leaves. Cover with the top half of the bun.
Serve the herbed beef burgers with the bell pepper zucchini stir-fry on the side.
