Herb-Marinated Beef and Cherry Tomato Skewers with Garlic Broccoli recipe

This is a yummy meal with beef and tomatoes on sticks. They are cooked until they are just right. There are also little trees made of broccoli that taste like garlic. You dip the beef and tomatoes in a cool, creamy sauce. It's fun to eat and very tasty!

Ingredients

45 ml red wine vinegar
2 tbsp honey
2 x (10 oz) bags broccoli florets
1 pint cherry tomatoes
1 large garlic clove
680 g sirloin steak
3/4 cup Greek yogurt
1/4 cup fresh dill, chopped
1/4 cup fresh mint, chopped
1/2 tsp garlic powder
1/2 tsp onion powder
Black pepper to taste
2 tbsp olive oil
1/2 tsp dried basil
1/2 tsp dried thyme
Salt to taste

Method

Begin by soaking 8-12 wooden skewers in water for at least 15 minutes to prevent burning during cooking.

Rinse and pat dry the cherry tomatoes. Set aside.

Cut the sirloin steak into 1-inch cubes and place them in a bowl.

In a small bowl, whisk together red wine vinegar, honey, garlic powder, onion powder, dried basil, dried thyme, salt, and black pepper. Pour this marinade over the steak cubes and toss to coat evenly. Let it sit for 10 minutes.

Preheat a grill pan or skillet over medium-high heat.

Thread the marinated steak and cherry tomatoes onto the skewers, alternating between the two.

Place the skewers on the hot grill pan. Cook, turning occasionally, until the steak is cooked to your liking and the tomatoes are soft and slightly charred, about 6-10 minutes.

While the skewers are cooking, steam the broccoli florets in a pot with a steamer insert until tender, about 5 minutes.

Finely mince the garlic clove and mix it with the olive oil. Toss the steamed broccoli in the garlic oil and season with salt and pepper to taste.

In a small bowl, combine Greek yogurt with chopped dill and mint to create a herbed dipping sauce.

Serve the skewers with the garlic broccoli on the side and the herbed yogurt sauce for dipping.
