Herb-Infused Chicken with Apple & Sweet Potato Puree recipe

This dish is a warm, comforting meal with juicy chicken, sweet apples, and a creamy sweet potato puree. It's cooked with herbs and garlic for a yummy taste. It's easy to make for dinner and will make your tummy happy!

Ingredients

2 medium sweet potatoes
240 ml chicken broth
680 g chicken thighs, boneless skinless
6 cloves garlic
3 apples
1/2 tsp black pepper
2 tbsp extra virgin olive oil
1 tbsp fresh thyme, chopped
1/2 tbsp fresh sage, chopped
3/4 tsp salt

Method

Preheat your oven to 220°C (425°F).

Peel and mince the garlic. In a bowl, mix together the garlic, olive oil, thyme, sage, salt, and black pepper.

Put the chicken in the bowl and coat it with the herb mixture.

Wash, core, and cut the apples into wedges.

Put the chicken and apples in a baking dish. Cook in the oven for 25 minutes, until the chicken is done and the apples are tender.

While the chicken cooks, wash, peel, and chop the sweet potatoes into chunks.

Put the sweet potato chunks in a pot with water. Heat until boiling, then cook for 15 minutes until they are very soft.

Drain the sweet potatoes and put them back in the pot. Add the chicken broth, a bit of olive oil, salt, and pepper. Mash it all up until it's smooth and creamy.

To serve, put some sweet potato puree on each plate and top with chicken thighs and roasted apples. Enjoy your tasty meal!
