Herb-Crusted Tilapia with Lemon-Garlic Green Beans & Cherry Tomatoes recipe


This is a fish dish with a crunchy herb crust. It comes with tasty green beans and sweet cherry tomatoes. You cook the fish in a pan and the veggies in the oven. It's a yummy dinner that's not too hard to make!


1 lb green beans, trimmed
1 pint cherry tomatoes
1/4 cup fresh basil leaves, chopped
2 tablespoons fresh oregano leaves, chopped
4 tilapia fillets (6 oz each)
1/2 cup breadcrumbs
1/4 cup grated Parmesan cheese
1 tablespoon olive oil
2 tablespoons unsalted butter
2 cloves garlic, minced
1 lemon, zest and juice
Salt to taste
Black pepper to taste


Preheat oven to 425°F. Line a baking sheet with aluminum foil.
In a bowl, mix breadcrumbs, Parmesan cheese, half of the basil, oregano, lemon zest, salt, and pepper.
Coat each tilapia fillet with the breadcrumb mixture, pressing to adhere.
Heat olive oil and 1 tablespoon of butter in a skillet over medium heat. Cook tilapia until golden brown, about 3-4 minutes per side. Transfer to a plate.
On the prepared baking sheet, toss green beans and cherry tomatoes with the remaining butter, minced garlic, salt, and pepper.
Roast in the oven until the vegetables are tender, about 15-20 minutes.
Remove vegetables from the oven, squeeze lemon juice over them, and sprinkle with the remaining basil.
Serve the herb-crusted tilapia with the lemon-garlic green beans and cherry tomatoes.
