Herb-Crusted Steak with Garlic Roasted Potatoes & Green Beans recipe

This is a yummy dinner with steak, potatoes, and green beans. The steak is cooked in a pan and has herbs on it. The potatoes are cooked in the oven with garlic. The green beans are cooked with the potatoes.

Ingredients

1 kg new potatoes, quartered
700 g sirloin steak
200 g green beans, trimmed
1/4 tsp black pepper
2 tbsp extra virgin olive oil
1 1/2 tsp salt
1 tbsp virgin coconut oil
1 tsp dried rosemary
1 tsp dried thyme
3 cloves garlic, minced

Method

Preheat the oven to 450°F (232°C) and place the rack in the center position.

Wash and dry the new potatoes and green beans.

In a bowl, toss the quartered potatoes with 1 tbsp olive oil, minced garlic, 1 tsp salt, and 1/2 tsp black pepper.

Spread the potatoes out in a single layer on a baking sheet and roast for 15 minutes.

While the potatoes are roasting, pat the steak dry with paper towels and place on a plate; season with 1/2 tsp salt, rosemary, and thyme on both sides.

After 15 minutes, add the green beans to the baking sheet with the potatoes, tossing to combine, and roast for another 10 minutes.

While the vegetables finish roasting, preheat a skillet over medium-high heat.

Once the skillet is hot, add coconut oil and swirl to coat the bottom.

Carefully place the seasoned steak in the skillet; flipping every 15 to 30 seconds, cook the steak until desired doneness, about 5 to 7 minutes for medium-rare.

Transfer the steak to a plate and let it rest for 5 to 10 minutes.

To serve, slice the steak against the grain and divide it among plates along with the garlic roasted potatoes and green beans.
