Herb-Crusted Steak with Charred Cherry Tomatoes and Garlic recipe

This is a yummy steak dinner with juicy tomatoes and a tasty sauce. You cook the steak in a pan and the tomatoes in the oven. Then you mix lemon with yogurt to make a sauce. Put it all on a plate and eat!

Ingredients

1 tbsp brown sugar
1 tsp ground coriander
1 tsp crushed red pepper
1 tsp ground cumin
2 tbsp extra virgin olive oil
1 tsp salt, plus more for seasoning
8 cloves garlic, unpeeled
3 pints cherry tomatoes
1 lb ribeye steak
1/2 cup plain Greek yogurt
1 large lemon, zested and juiced
1/4 cup fresh basil leaves, chopped
1/4 cup fresh oregano leaves, chopped

Method

Preheat your oven to 450°F and put the oven rack in the top part.

Wash the tomatoes and herbs. Dry them with a towel.

Put the tomatoes and garlic on a baking sheet. Drizzle with 1 tablespoon olive oil, sprinkle with brown sugar, coriander, red pepper, cumin, and a pinch of salt. Mix them up and spread them out.

Put the baking sheet in the oven. Let the tomatoes cook until they pop, about 15 minutes.

While the tomatoes cook, put a pan on the stove over medium-high heat.

Dry the steak with paper towels. Sprinkle salt on both sides.

When the pan is hot, put in 1 tablespoon olive oil. Add the steak. Cook it until it's how you like it, about 3-4 minutes on each side. Take the steak out of the pan and let it rest.

Mix the lemon zest, lemon juice, yogurt, and a pinch of salt in a bowl.

Take the tomatoes out of the oven. Use a spoon to press the garlic out of its skin. Be careful, it's hot!

Cut the basil and oregano leaves. Mix half with the tomatoes and garlic.

Cut the steak into thin slices.

Put some steak on each plate. Add a big spoon of the lemon yogurt. Top with the tomatoes, garlic, and the rest of the herbs. Now it's ready to eat!
