Herb-Crusted Sirloin with Roasted Garlic Mashed Potatoes & Asparagus recipe

This is a yummy dinner with steak, potatoes, and asparagus. The steak has herbs on it. The potatoes are soft and have garlic in them. The asparagus is cooked with butter. It's a good meal for your family.

Ingredients

4 medium russet potatoes
1 bunch asparagus
1 tbsp unsalted butter
1/2 cup whole milk
4 cloves garlic
1 tbsp fresh rosemary
1 tbsp fresh thyme
1 tbsp fresh parsley
2 tsp lemon zest
1 lb sirloin steak
1 tsp salt
1 tsp black pepper
2 tbsp olive oil

Preheat your oven to 425°F (220°C).

Wash, peel, and cut the potatoes into even chunks. Place them in a pot of salted water, bring to a boil, and cook until tender, about 15 minutes.

While the potatoes are cooking, trim the woody ends off the asparagus and place them on a baking sheet. Melt butter and drizzle over the asparagus, then sprinkle with salt and pepper. Roast in the oven until tender, about 12-15 minutes.

Drain the potatoes and return them to the pot. Add minced garlic, milk, salt, and pepper. Mash until smooth and creamy.

Finely chop the rosemary, thyme, and parsley. Combine with lemon zest, salt, and pepper to create an herb crust mixture.

Pat the sirloin steak dry with paper towels. Press the herb crust mixture onto both sides of the steak.

Heat olive oil in a skillet over medium-high heat. Add the steak and cook to your desired doneness, about 4-6 minutes per side for medium-rare.

Let the steak rest for 5 minutes, then slice against the grain.

Serve the herb-crusted sirloin with roasted garlic mashed potatoes and roasted asparagus on the side.
