This dish is a yummy dinner with pork chops covered in herbs. It has sweet roasted apples and parsnips on the side. It's a warm meal that's perfect for a cozy night!

Ingredients

4 pork chops, boneless
2 tbsp fresh rosemary, chopped
2 tbsp fresh thyme, chopped
4 tbsp olive oil
1 tsp salt
1 tsp black pepper
2 apples, cored and sliced
1/2 lb parsnips, peeled and sliced
1/4 tsp nutmeg, ground
1/4 cup walnuts, chopped

Method

1
Preheat oven to 425°F.
2
In a small bowl, mix together the chopped rosemary, thyme, 2 tablespoons of olive oil, salt, and pepper to create the herb mixture.
3
Rub the herb mixture onto both sides of the pork chops.
4
Place the pork chops on a baking sheet and set aside.
5
In another bowl, toss the apple slices and parsnips with the remaining 2 tablespoons of olive oil and nutmeg until well coated.
6
Spread the apple and parsnip mixture on another baking sheet in a single layer.
7
Place both baking sheets in the oven. Roast the pork chops and apple-parsnip mixture for about 20-25 minutes, or until the pork chops are cooked through and the apples and parsnips are tender.
8
Halfway through the cooking time, sprinkle the walnuts over the apple and parsnip mixture and continue roasting.
9
Once done, remove both baking sheets from the oven.
10
Serve the herb-crusted pork chops with the roasted apples, parsnips, and toasted walnuts on the side.
