Herb-Crusted Pork Chops with Garlic Spinach & Sweet Potato Mash recipe

This is a yummy dinner with pork chops that have a tasty crust. It comes with spinach cooked with garlic and a sweet potato mash. It's a good meal for your family that's not too hard to make.

Ingredients

4 bone-in pork chops, about 1-inch thick
1 teaspoon dried thyme
1 teaspoon dried rosemary
1/2 teaspoon garlic powder
1/2 teaspoon onion powder
2 tablespoons olive oil
4 cups baby spinach
2 cloves garlic, minced
2 large sweet potatoes, peeled and cubed
4 tablespoons unsalted butter
1/4 cup milk
Salt to taste
Black pepper to taste

Method

Preheat your oven to 375°F (190°C).

In a small bowl, mix together the dried thyme, rosemary, garlic powder, onion powder, salt, and black pepper.

Rub the pork chops with the herb mixture, making sure to coat them evenly.

Heat olive oil in a large ovenproof skillet over medium-high heat. Add the pork chops and sear for about 3 minutes on each side, until they develop a golden crust.

Transfer the skillet to the preheated oven and roast the pork chops for about 10-15 minutes, or until they reach an internal temperature of 145°F (63°C).

While the pork chops are in the oven, place the sweet potatoes in a medium pot and cover with water. Bring to a boil and cook until tender, about 15 minutes.

In another skillet, heat 1 tablespoon of butter over medium heat. Add the minced garlic and cook until fragrant, about 1 minute.

Add the spinach to the skillet with garlic and cook until wilted, about 2-3 minutes. Season with salt and pepper to taste.

Drain the sweet potatoes and return them to the pot. Add the remaining butter and milk, then mash until smooth. Season with salt and pepper to taste.

Once the pork chops are done, let them rest for a few minutes before serving.

To serve, place a scoop of sweet potato mash on each plate, top with garlic spinach, and place a pork chop alongside. Enjoy your herb-crusted pork chops with sides!
