Ingredients

2.5 lb chicken wings, split with tips removed
1 English cucumber, diced
1 pint cherry tomatoes, halved
2 ripe avocados, diced
1 medium red onion, diced
1/4 cup fresh parsley, chopped
1/4 cup fresh basil, chopped
1/4 cup extra virgin olive oil
2 tbsp balsamic vinegar
1/2 tsp dried oregano
1/2 tsp dried thyme
1/2 tsp garlic powder
1/2 tsp onion powder
1/2 tsp salt
1/2 tsp ground black pepper
4 cups mixed salad greens

Preheat the oven to 425°F (220°C).

In a large bowl, combine 1/4 tsp salt, 1/4 tsp black pepper, garlic powder, onion powder, dried oregano, and dried thyme.

Add the chicken wings to the bowl and toss until they are evenly coated with the herb mixture.

Place the wings on a baking sheet lined with parchment paper, spreading them out in a single layer.

Bake in the preheated oven for 25 minutes, turning the wings halfway through, until they are crispy and golden brown.

While the wings are baking, prepare the salad. In a large bowl, combine the mixed salad greens, diced cucumber, halved cherry tomatoes, diced red onion, and diced avocados.

In a small bowl, whisk together the extra virgin olive oil, balsamic vinegar, remaining 1/4 tsp salt, and 1/4 tsp black pepper to create the dressing.

Drizzle the dressing over the salad and toss to coat evenly.
