Hearty Turkey and Rice Soup recipe

This is a warm soup with turkey, rice, and veggies. It has green peppers, carrots, and garlic. It's topped with cheese. It's good for a cold day and easy to make. You cook turkey, then add veggies and rice, and cook until soft. Then add spinach and cheese.

Ingredients

1 tablespoon extra virgin olive oil
1 pound ground turkey
1 teaspoon salt
1/2 teaspoon black pepper
1 large green bell pepper, diced
2 medium carrots, peeled and diced
2 sticks celery, diced
4 cups chicken or vegetable broth
3/4 cup white rice
1 can (15 ounces) crushed tomatoes
1 teaspoon Italian seasoning
4 cups baby spinach, roughly chopped
1/4 cup fresh parsley, chopped
1/2 cup shredded mozzarella cheese

Method

Heat a large pot over medium-high heat and add the olive oil.

Add the ground turkey, salt, and pepper to the pot; cook, breaking it apart with a spoon, until browned, about 5 minutes.

Add the diced green bell pepper, carrots, and celery to the pot; cook, stirring occasionally, until the vegetables start to soften, about 5 minutes.

Pour in the chicken or vegetable broth, add the white rice, and crushed tomatoes. Stir in the Italian seasoning.

Bring the mixture to a boil, then reduce the heat to low and let it simmer until the rice is cooked and the vegetables are tender, about 20 minutes.

Stir in the chopped baby spinach and parsley, and continue to simmer until the spinach has wilted, about 2 minutes.

Remove the pot from the heat, and stir in the shredded mozzarella cheese until melted.

Ladle the soup into bowls and serve hot.
