Hearty Sausage and Spinach Soup recipe


This is a warm, filling soup with sausage and spinach. It's made with potatoes and a tasty broth. You cook it all in one pot. It's good with bread on the side.


200 g Italian sausage
1 large onion, chopped
3 cloves of garlic, minced
3 large potatoes, diced
1 tsp smoked paprika
1.5 L beef or vegetable broth
300 g fresh spinach
1 tbsp olive oil
Salt and pepper to taste
4 slices of crusty bread, to serve


Heat olive oil in a large pot over medium heat. Add the Italian sausage, breaking it apart as it cooks.
Once the sausage is browned, add the chopped onion and minced garlic. Cook until the onion is soft and translucent.
Stir in the diced potatoes and smoked paprika, cooking for another 2 minutes.
Pour in the broth and bring the mixture to a boil. Reduce heat to a simmer and cook for 15 minutes, or until the potatoes are tender.
Add the fresh spinach to the pot and cook until it wilts, about 2-3 minutes.
Season the soup with salt and pepper to taste.
Serve hot with a slice of crusty bread on the side.
