Hearty Chicken Sausage and Vegetable Soup recipe


This is a warm, filling soup with chicken sausage, pasta, and veggies. It has tomatoes, zucchini, and kale. It's easy to make and perfect for dinner. You cook it all in one pot and it makes enough for four people.


2 tablespoons extra virgin olive oil
1 medium yellow onion, diced
3 cloves garlic, minced
2 chicken sausages, casings removed
1 teaspoon dried oregano
1 teaspoon dried basil
1/2 teaspoon salt
1/4 teaspoon black pepper
1 medium zucchini, diced
28 ounces (1 can) diced tomatoes
24 ounces (3 cups) chicken broth
1 tablespoon balsamic vinegar
4 ounces rotini pasta
4 ounces (about 4 cups) chopped kale
2 ounces grated Parmesan cheese


Heat olive oil in a large pot over medium heat.
Add diced onion and minced garlic, sauté until onion is translucent, about 3 minutes.
Add chicken sausage meat, oregano, basil, salt, and pepper. Cook, breaking apart the sausage, until browned, about 5 minutes.
Stir in diced zucchini and cook for another 2 minutes.
Pour in the diced tomatoes with their juice and chicken broth. Add balsamic vinegar and bring to a simmer.
Add rotini pasta to the pot and simmer until pasta is al dente, about 10 minutes.
Stir in the chopped kale and cook until wilted, about 3 minutes.
Remove from heat and let the soup rest for a couple of minutes.
Serve hot, garnished with grated Parmesan cheese.
