Hearty Chicken and Vegetable Penne recipe


This is a yummy pasta dish with chicken, zucchini, and bell peppers. It's mixed with a tomato sauce and topped with cheese. It's a warm, filling meal that's perfect for dinner. You can share it with your family or friends!


2 tablespoons olive oil
1 pound chicken breast, cut into bite-sized pieces
1 large zucchini, diced
1 red bell pepper, diced
1 yellow bell pepper, diced
4 cloves garlic, minced
1/2 teaspoon crushed red pepper flakes
1 teaspoon dried oregano
1 teaspoon salt
1/2 teaspoon black pepper
12 ounces penne pasta
1 x (24 oz) can crushed tomatoes
1/4 cup fresh basil, chopped
1/2 cup grated mozzarella cheese


Fill a large pot with water, add a pinch of salt, and bring to a boil. Add the penne pasta and cook according to the package instructions, usually 10-12 minutes.
In a large skillet, heat the olive oil over medium-high heat. Add the chicken pieces and cook until browned and cooked through, about 5-7 minutes. Remove the chicken from the skillet and set aside.
In the same skillet, add the diced zucchini and bell peppers. Cook for about 5 minutes, until they start to soften.
Add the minced garlic, red pepper flakes, oregano, salt, and black pepper to the skillet with the vegetables. Cook for another 2 minutes.
Pour the crushed tomatoes into the skillet. Stir and bring the sauce to a simmer. Let it cook for about 10 minutes, stirring occasionally.
Drain the cooked pasta and add it to the skillet with the sauce. Add the cooked chicken back into the skillet as well. Stir everything together to coat the pasta and chicken with the sauce.
Sprinkle the chopped basil over the pasta and stir to combine.
Serve the pasta hot, topped with grated mozzarella cheese.
