Hearty Brunch Frittata recipe


This is a yummy egg dish filled with veggies and meat. It's cooked in a pan and then in the oven. It's good for breakfast or lunch. You can share it with your family or friends.


250 g thick-cut bacon
6 chicken apple sausages
200 g cherry tomatoes
1 medium onion
150 g baby spinach
12 eggs
60 ml skim milk
30 g cheddar cheese
2 slices whole grain bread
1/2 tsp black pepper
1/2 tsp salt
1 tbsp olive oil


Preheat your oven to 180°C/356°F.
Chop the bacon into bite-size pieces and cook in a large ovenproof frying pan over medium heat until crispy. Remove and set aside.
Slice the sausages and cook in the same pan until browned. Remove and set with bacon.
Dice the onion and halve the cherry tomatoes. Add olive oil to the pan, then cook the onion until translucent. Add the tomatoes and cook until they start to soften.
Return the bacon and sausage to the pan, add the baby spinach, and cook until the spinach wilts.
In a large bowl, whisk together the eggs, skim milk, salt, and pepper until smooth.
Pour the egg mixture over the ingredients in the frying pan, ensuring an even distribution.
Sprinkle grated cheddar cheese on top of the egg mixture.
Place the pan in the oven and bake for 15 minutes or until the eggs are set.
Toast the whole grain bread slices.
Serve the frittata warm with a side of toasted whole grain bread.
