Hearty Beef and Vegetable Lasagna Soup recipe


This is a warm, filling soup that tastes like lasagna. It has beef, noodles, tomatoes, and veggies. You cook it all in one pot and it's ready in 35 minutes. It's good for dinner and makes enough for 6 people.


1.5 liters chicken or vegetable broth
1 medium onion, diced
3 cloves garlic, minced
1 kg lean ground beef
10 no-boil lasagna noodles, broken into pieces
300 g fresh spinach, roughly chopped
2 medium carrots, peeled and shredded
2 x (240 ml) cans tomato sauce
1 teaspoon dried oregano
1 teaspoon dried basil
1/2 teaspoon salt
1/4 teaspoon black pepper
1/2 teaspoon red pepper flakes
100 g grated Parmesan cheese for serving


Heat a large pot over medium-high heat. Add the ground beef, onion, garlic, salt, black pepper, and red pepper flakes. Cook for 6-7 minutes, breaking the beef apart until browned.
Add the shredded carrots to the pot and cook for another 2 minutes.
Stir in the tomato sauce, dried oregano, and dried basil. Cook for 1 minute to combine the flavors.
Pour in the chicken or vegetable broth and bring the mixture to a boil.
Add the broken lasagna noodles to the pot, reduce the heat to a simmer, and cook for 10 minutes, or until the noodles are tender.
Stir in the chopped spinach and cook for an additional 3 minutes, until the spinach is wilted and heated through.
Taste and adjust seasoning if necessary.
Serve hot, garnished with grated Parmesan cheese.
