This is a yummy sandwich with ham, apple, and cheddar cheese. It comes with a fresh arugula salad. You toast the bread and stack the ingredients to make the sandwich. The salad is easy with a simple dressing.

Ingredients

4 slices of sourdough bread
8 slices of smoked ham
1 large apple
4 oz sharp cheddar cheese, sliced
4 tbsp mayonnaise
1 tsp honey mustard
1/4 tsp black pepper
1/4 tsp salt
2 cups arugula
1/4 cup red wine vinegar
1/2 cup extra virgin olive oil
1 tsp honey
1/4 lb cremini mushrooms, thinly sliced

Method

Preheat your oven's broiler on high and position the rack about 6 inches from the top.

Place the sourdough bread slices on a baking sheet and broil until lightly toasted, about 1-2 minutes. Watch closely to avoid burning.

Wash and dry the arugula and set aside. If the mushrooms are not pre-sliced, thinly slice them now.

Core and thinly slice the apple.

Spread mayonnaise and honey mustard on one side of each toasted bread slice.

Layer two slices of ham, several apple slices, and a slice of cheddar cheese on half of the bread slices. Top with the remaining bread slices to close the sandwiches.

In a bowl, whisk together the red wine vinegar, olive oil, honey, salt, and black pepper to create the dressing.

Toss the arugula and sliced mushrooms in the dressing until well coated.

Cut the sandwiches in half, if desired, and serve each with a portion of the arugula salad.
