This is a yummy taco recipe with ground turkey and fresh avocado corn salsa. You put meat, cheese, and salsa in a soft tortilla. It's easy to make and very tasty!

Ingredients

1 lb ground turkey
1 ripe avocado
1 cup frozen corn, thawed
1/2 cup red onion, finely chopped
1/4 cup fresh cilantro, chopped
1 tablespoon olive oil
8 small flour tortillas
1 cup iceberg lettuce, shredded
3/4 cup Monterey Jack cheese, grated
1 teaspoon garlic powder
1 teaspoon smoked paprika
1/2 teaspoon salt
1/4 teaspoon black pepper
1 lime, juiced

Method

Heat the olive oil in a skillet over medium-high heat.

Add the ground turkey to the skillet and cook for 5-7 minutes, breaking it apart with a spoon until browned and crumbly.

Season the turkey with garlic powder, smoked paprika, salt, and pepper. Stir well and cook for another 2 minutes. Remove from heat.

In a bowl, combine the thawed corn, chopped red onion, cilantro, and lime juice. Cut the avocado into cubes and gently mix into the salsa.

Warm the flour tortillas in a dry pan over low heat for about 30 seconds on each side.

To assemble the tacos, lay a tortilla flat and add a scoop of the cooked turkey, a sprinkle of shredded lettuce, and a generous spoonful of avocado corn salsa.

Top each taco with grated Monterey Jack cheese.
