This is a yummy salad with ground turkey, fresh greens, and a creamy dressing. It has cheese, tomatoes, and a special dressing made with yogurt. It's like a burger but with lots of lettuce instead of a bun!

Ingredients

1 large avocado
1 tbsp diced pickles
6 oz shredded mozzarella cheese
5 cloves garlic, minced
2 cups cherry tomatoes, halved
1/4 cup sliced red onions
1 lb ground turkey
1/2 cup plain Greek yogurt
2 tbsp mustard
2 tbsp honey
6 cups mixed salad greens
1/4 tsp black pepper
1/4 tsp smoked paprika
2 tbsp olive oil
1 tbsp apple cider vinegar
1/4 tsp salt

Wash and dry all fresh produce.

In a small bowl, whisk together Greek yogurt, mustard, honey, apple cider vinegar, salt, and pepper to create the dressing. Set aside.

Heat olive oil in a skillet over medium-high heat. Add minced garlic and ground turkey. Season with smoked paprika and a pinch of salt. Cook until the turkey is browned and crumbly, about 5-7 minutes. Remove from heat.

In a large bowl, combine mixed salad greens, halved cherry tomatoes, and sliced red onions.

Halve and pit the avocado, then slice and scoop out with a spoon. Add to the salad.

Shred the mozzarella cheese and add to the salad.
