Ground Turkey and Asparagus Stir-Fry with Fried Egg recipe


This is a yummy dish with ground turkey, asparagus, and mushrooms. It's cooked in a pan and topped with a fried egg. It's good for dinner and has lots of veggies and protein.


1 lb ground turkey
1 lb asparagus, trimmed and cut into 1-inch pieces
1/2 lb cremini mushrooms, sliced
1 tbsp soy sauce
1 tbsp sesame oil
4 large eggs
2 tbsp olive oil
2 cloves garlic, minced
1/4 tsp red pepper flakes
1/2 tsp salt
1/4 tsp ground black pepper
1/4 cup green onions, chopped


Wash and dry the asparagus and mushrooms. Cut the asparagus into 1-inch pieces and slice the mushrooms.
Heat a large skillet over medium-high heat and add 1 tbsp olive oil.
Add the minced garlic and red pepper flakes to the skillet and sauté for 1 minute until fragrant.
Add the ground turkey to the skillet, breaking it apart with a spoon. Cook until browned, about 5-6 minutes.
To the skillet, add the asparagus, mushrooms, soy sauce, and sesame oil. Stir to combine and cook until the vegetables are tender, about 5-7 minutes.
In a separate pan, heat the remaining 1 tbsp olive oil over medium heat.
Crack the eggs into the pan and fry until the whites are set but yolks are still runny, about 3-4 minutes.
Season the stir-fry with salt and black pepper to taste.
To serve, divide the turkey and vegetable stir-fry between plates or bowls.
Top each with a fried egg and sprinkle with chopped green onions. Enjoy!
