This is a warm, cheesy casserole with ground beef, pasta, and veggies. It's like a big hug in a dish! You cook beef and mix it with pasta, sauce, and cheese. Then bake until bubbly!

Ingredients

1 pound (453.6 g) ground beef
1 tablespoon (15 ml) olive oil
1 large onion, diced (about 1 cup)
2 cloves garlic, minced (about 2 teaspoons)
1 teaspoon (2.6 g) dried oregano
1 teaspoon (2.3 g) smoked paprika
3 cups (720 ml) beef broth
1 1/2 cups (360 ml) milk
2 1/2 cups (225 g) uncooked elbow macaroni
1 cup (100 g) shredded cheddar cheese
1 cup (120 g) frozen mixed vegetables, thawed
Salt and pepper to taste

Method

Preheat your oven to 375°F (190°C).

In a large oven-safe skillet, heat olive oil over medium-high heat. Add ground beef and cook until browned, breaking it apart with a spoon.

Add diced onion and minced garlic to the skillet with the beef. Cook for 3-4 minutes until the onion is translucent.

Stir in dried oregano and smoked paprika, cooking for another minute until fragrant.

Pour in beef broth and milk, then add the uncooked elbow macaroni and thawed mixed vegetables. Season with salt and pepper.

Bring the mixture to a boil, then reduce heat to a simmer. Cover and cook for about 10 minutes, or until the macaroni is almost tender.

Remove the skillet from heat, sprinkle shredded cheddar cheese on top of the casserole.

Place the skillet in the preheated oven and bake for 10 minutes, or until the cheese is melted and bubbly.

Let the casserole cool for a few minutes before serving.
