This is a yummy taco recipe with grilled fish and a fresh salsa. The salsa has mango and cucumber. You put the fish and salsa in a tortilla to make a taco. It's fun to eat with your hands!

Ingredients

4 tilapia fillets (6 oz each)
1 tablespoon olive oil
1 teaspoon smoked paprika
1/2 teaspoon garlic powder
1/4 teaspoon ground cumin
1/4 teaspoon black pepper
1/2 teaspoon salt
1 ripe mango, peeled and diced
1/2 cucumber, diced
1/4 red onion, finely chopped
1 tablespoon chopped fresh cilantro
1 tablespoon lime juice
8 small flour tortillas
1/2 cup shredded purple cabbage

Preheat your grill to medium-high heat.

In a small bowl, mix together the smoked paprika, garlic powder, ground cumin, black pepper, and salt.

Brush the tilapia fillets with olive oil and rub the spice mixture over both sides of each fillet.

Place the tilapia on the grill and cook for about 3-5 minutes on each side, or until the fish is opaque and flakes easily with a fork.

While the fish is grilling, combine the diced mango, cucumber, red onion, chopped cilantro, and lime juice in a bowl to make the salsa. Mix well.

Warm the flour tortillas on the grill for about 20 seconds on each side or until they are slightly charred.

Once the fish is done, break it into chunks using a fork.

To assemble the tacos, place some shredded purple cabbage on each tortilla, add the grilled fish on top, and then spoon the mango-cucumber salsa over the fish.
