Grilled Scallops with Tomato and Avocado Salsa recipe


This is a yummy seafood dish with grilled scallops on top. It has a fresh salsa made with tomatoes, avocado, and a splash of lemon. It's a colorful and healthy meal that's perfect for dinner.


16 sea scallops
2 tablespoons extra virgin olive oil
1/2 teaspoon salt
1/4 teaspoon black pepper
2 medium tomatoes, diced
1 ripe avocado, diced
1 small red onion, finely chopped
2 tablespoons fresh cilantro, chopped
1 lemon, juiced
1/4 teaspoon chili flakes
1 teaspoon honey
5 ounces baby arugula


Preheat your grill or grill pan over medium-high heat.
Rinse the scallops and pat them dry with paper towels. Season with 1 tablespoon of olive oil, 1/4 teaspoon of salt, and 1/8 teaspoon of black pepper.
Grill the scallops for about 2-3 minutes on each side, or until they have nice grill marks and are cooked through. Remove from the grill and set aside.
In a bowl, combine the diced tomatoes, diced avocado, chopped red onion, chopped cilantro, lemon juice, remaining olive oil, honey, chili flakes, and the rest of the salt and pepper. Mix well to create the salsa.
Place the baby arugula on plates and top with the tomato and avocado salsa.
Arrange the grilled scallops on top of the salsa and arugula.
Serve immediately and enjoy your colorful and tasty grilled scallops with tomato and avocado salsa.
