Grilled Salmon and Avocado Quinoa Salad recipe

This is a yummy bowl with grilled salmon, quinoa, avocado, and veggies. It has a tangy lemon dressing. You cook the quinoa, grill the salmon, and mix it all with fresh veggies. It's healthy and tastes so good!

Ingredients

1 cup quinoa
16 fl oz vegetable broth
1 avocado
1/2 lb salmon fillet
2 tbsp olive oil
1 lemon
1/4 tsp salt
1/4 tsp black pepper
1 tbsp honey
1 tbsp Dijon mustard
1/2 cup cherry tomatoes
1/4 cup red onion
2 cups baby spinach
1/4 cup feta cheese, crumbled

Preheat your grill to medium-high heat.

In a medium saucepan, combine 1 cup quinoa and 16 fl oz vegetable broth; bring to a boil. Reduce heat to a simmer, cover, and cook for 15 minutes. Remove from heat and let stand, covered, for 5 minutes.

Cut 1/2 lb salmon into 1-inch cubes. In a bowl, mix 1 tbsp olive oil, juice of 1/2 lemon, 1/4 tsp salt, and 1/4 tsp black pepper. Add salmon cubes to the bowl and gently toss to coat.

Thread salmon onto skewers and grill for 6-8 minutes, turning occasionally, until cooked through and slightly charred.

In a small bowl, whisk together the juice of the other 1/2 lemon, 1 tbsp honey, 1 tbsp Dijon mustard, and 1 tbsp olive oil to create the dressing.

Cut 1 avocado into cubes, slice 1/2 cup cherry tomatoes in halves, and finely chop 1/4 cup red onion.

In a large bowl, combine the cooked quinoa, 2 cups baby spinach, avocado, cherry tomatoes, red onion, and the lemon dressing. Toss to mix well.

Divide the salad among bowls, top with grilled salmon skewers, and sprinkle with 1/4 cup crumbled feta cheese.
