This is a yummy meal with pork meatballs that are grilled. They are served with rice that tastes like coconut and a salad with lots of veggies. It's a fun dinner that's not too hard to make!

Ingredients

1 cup jasmine rice
1 can (13.5 fl oz) coconut milk
1 lb lean ground pork
1 tbsp soy sauce
1/4 tsp crushed red pepper flakes
1 tbsp honey
1 large carrot
1/2 English cucumber
1 large tomato
1 tbsp rice vinegar
1 tbsp sesame oil
1/2 tsp salt
1/4 tsp black pepper
1 lime, juiced
1 clove garlic, minced
1 inch piece ginger, minced
2 green onions, thinly sliced
Cooking oil, for grilling

Method

Rinse the jasmine rice under cold water until the water runs clear. In a medium saucepan, combine the rice with the coconut milk and a pinch of salt. Bring to a boil, then cover, reduce heat to low, and simmer for 18-20 minutes, or until the liquid is absorbed and rice is tender.

In a large bowl, mix together the ground pork, soy sauce, crushed red pepper flakes, honey, minced garlic, minced ginger, and juice from half the lime. Form the mixture into 16 small meatballs.

Preheat a grill pan or skillet over medium-high heat and brush with cooking oil. Grill the meatballs for 10-12 minutes, turning occasionally, until browned and cooked through.

For the salad, peel and grate the carrot, dice the cucumber, and dice the tomato. In a separate bowl, whisk together the rice vinegar, sesame oil, juice from the remaining half lime, salt, and black pepper to create a dressing.

Toss the carrot, cucumber, tomato, and sliced green onions with the dressing to combine.

Serve the grilled pork meatballs over the coconut rice with the mixed veggie salad on the side. Enjoy your delicious meal!
