Grilled Pork Chops with Peaches and Tangy Slaw recipe

This is a yummy dinner with grilled pork chops, sweet peaches, and a tangy slaw. You cook the meat on a grill and mix the slaw in a bowl. It's easy and fun to make!

4 bone-in pork chops, about 1-inch thick
2 peaches, cut into wedges
1 tablespoon olive oil
1 teaspoon smoked paprika
Salt and pepper to taste
1 (340 g) package broccoli slaw
60 ml apple cider vinegar
1 tablespoon Dijon mustard
2 tablespoons honey
4 tablespoons mayonnaise
1 small bunch cilantro, chopped
4 tablespoons unsalted butter, melted

Preheat your grill to medium-high heat.
Season the pork chops with smoked paprika, salt, and pepper. Brush the peaches with olive oil.
Grill the pork chops for about 5-6 minutes on each side or until they reach an internal temperature of 145°F (63°C).
Add the peaches to the grill during the last 4 minutes, turning once, until they are charred and tender.
In a large bowl, whisk together apple cider vinegar, Dijon mustard, honey, mayonnaise, and a pinch of salt and pepper to create the dressing.
Toss the broccoli slaw and chopped cilantro in the dressing until well coated.
Let the pork chops rest for a few minutes after grilling.
Serve the pork chops with grilled peaches on the side and a generous helping of the tangy slaw.
Drizzle melted butter over the pork chops and peaches before serving, if desired.
