This is a yummy dinner with grilled pork chops and fresh veggies. The pork is juicy and has a nice, smoky taste. The asparagus and red peppers are crunchy. A lemony yogurt sauce makes it all taste so good!

Ingredients

4 pork chops, bone-in, about 1 inch thick
1 lb asparagus, trimmed
2 red bell peppers, sliced into thin strips
3/4 cup plain Greek yogurt
1/4 cup lemon juice
1/4 cup walnuts, chopped
2 tablespoons honey
1 tablespoon olive oil
1 teaspoon smoked paprika
Salt to taste
Black pepper to taste

Preheat your grill to medium-high heat.

Season the pork chops with salt, pepper, and smoked paprika on both sides.

Grill the pork chops for about 7-8 minutes on each side, or until the internal temperature reaches 145°F. Let them rest for 5 minutes after grilling.

While the pork chops are grilling, toss the asparagus and red bell peppers with olive oil, salt, and pepper.

Grill the vegetables alongside the pork chops for about 4-5 minutes, or until they are tender and have grill marks.

In a small bowl, mix together the Greek yogurt, lemon juice, honey, and a pinch of salt to create the lemon yogurt sauce.

Toast the chopped walnuts in a dry skillet over medium heat for 2-3 minutes, or until they are golden and fragrant.

To serve, place a pork chop on each plate, along with a portion of the grilled asparagus and red peppers.

Drizzle the lemon yogurt sauce over the pork chops and vegetables, and sprinkle with toasted walnuts.
