Grilled Peach and Arugula Salad recipe


This is a yummy salad with grilled peaches and spicy arugula leaves. It has crunchy almonds and a tangy orange dressing. It's a fresh salad for lunch or dinner.


4 Peaches
150 g Arugula
2 Oranges
50 g Sliced Almonds
1 Red Onion
1 (15 g) Small Bunch of Mint
2 Cans of Chickpeas
150 g Feta Cheese
30 ml Balsamic Vinegar
60 ml Olive Oil
Salt and Pepper to taste


Cut the peaches into wedges and grill on a preheated pan over high heat until charred, about 4-5 minutes.
Place arugula in a large bowl. Zest and juice 1 orange over the arugula, season with salt and pepper, and toss to combine.
In the same pan used for peaches, toast the sliced almonds over medium heat until golden, about 2-3 minutes.
Peel and thinly slice the red onion and add to the arugula. Chop the mint leaves and add to the salad.
For the dressing, combine the juice of the second orange with balsamic vinegar and 30ml of olive oil in a small jar. Shake well and season with salt and pepper.
Drain and rinse the chickpeas, then add to the salad along with the toasted almonds and dressing. Toss everything together.
Crumble the feta cheese over the salad.
Arrange the grilled peach wedges on top of the salad and serve.
