Grilled Paneer Tacos with Avocado Salsa recipe

This is a yummy taco recipe with grilled cheese and fresh veggies. You put cheese, veggies, and avocado salsa on a soft taco shell. It's fun to make and eat!

Ingredients

3 Bell Peppers (1 Red, 1 Yellow, 1 Green)
1 Large Red Onion
1 Packet of Taco Seasoning Mix
1 Bunch of Cilantro
400 g Paneer
8 Corn Tortillas
1 Ripe Avocado
1 Lime
100 ml Greek Yogurt
30 g Monterey Jack Cheese
30 g Crushed Tortilla Chips
2 Tablespoons Olive Oil

Method

Warm up each corn tortilla in a pan for about 30 seconds on each side. Set aside.

Cut the paneer into 1/2-inch thick slices. In a bowl, mix paneer with half of the taco seasoning, a pinch of salt, pepper, and 1 tablespoon of olive oil. Ensure the paneer is well-coated.

Heat a grill pan over medium heat and cook the paneer until it has grill marks on both sides, about 3-4 minutes per side. Remove from heat.

Slice the bell peppers and red onion into strips. In a pan, heat the remaining olive oil over medium heat and sauté the vegetables until soft. Sprinkle the rest of the taco seasoning over the vegetables and stir well.

Mash the avocado in a bowl and mix with the juice of one lime to make a simple avocado salsa. Season with salt to taste.

Grate the Monterey Jack cheese and set aside.

Assemble the tacos by placing some of the sautéed vegetables on a tortilla, followed by a couple of slices of grilled paneer.

Top with a spoonful of avocado salsa, a dollop of Greek yogurt, some crushed tortilla chips, and a sprinkle of grated cheese.

Garnish with fresh cilantro leaves. Serve immediately and enjoy your grilled paneer tacos!
