Grilled Nectarine, Blueberry & Spinach Salad with Almonds & Feta recipe


This is a yummy salad with grilled nectarines and fresh blueberries. It has spinach, almonds, and feta cheese. You make a sweet dressing to put on top. It's good for a summer meal!


4 nectarines
2 cups fresh blueberries
5 ounces baby spinach
1/3 cup sliced almonds
4 ounces feta cheese
2 tablespoons apple cider vinegar
1/4 teaspoon ground cinnamon
1 tablespoon maple syrup
1/4 cup olive oil
1/4 teaspoon salt
1/4 teaspoon black pepper


Preheat a grill pan or skillet over medium heat.
Wash the nectarines, cut them in half, and remove the pits.
Place the nectarines cut side down on the grill or skillet. Cook until they have grill marks and are a bit soft, about 3 minutes per side. Then put them on a plate.
Put the baby spinach in a big bowl.
Add the fresh blueberries to the bowl with the spinach.
In a small bowl, mix the apple cider vinegar, cinnamon, maple syrup, olive oil, salt, and pepper to make the dressing.
Cut the grilled nectarines into slices and add them to the spinach and blueberries.
Toss the salad with the dressing until everything is nicely mixed.
Crumble the feta cheese and sprinkle it over the salad along with the sliced almonds.
Serve the salad on plates and enjoy!
