Grilled Lime Tilapia with Chickpea, Tomato, Avocado & Parsley Salad recipe

This is a fish dish with a fresh salad. You grill the tilapia with lime. The salad has chickpeas, tomatoes, avocado, parsley, and cheese. It's yummy and not too hard to make!

Ingredients

4 (6 oz) tilapia fillets
2 limes
1 (15 oz) can chickpeas
2 medium tomatoes
1 large avocado
1 small bunch parsley
1 (4 oz) package crumbled goat cheese
1/4 teaspoon black pepper
1/4 teaspoon ground cumin
2 tablespoons extra virgin olive oil
1/4 teaspoon garlic powder
1 tablespoon honey
1/2 teaspoon salt

Method

Preheat your grill to medium-high heat.

Drain and rinse the chickpeas, then add them to a large salad bowl.

Dice the tomatoes and avocado, and add them to the bowl with the chickpeas.

Wash and chop the parsley leaves, discarding the stems, and add them to the salad.

Crumble the goat cheese into the salad bowl, and season with salt and pepper.

In a small bowl, whisk together the juice of 1 lime, olive oil, honey, garlic powder, and cumin to create the dressing.

Pour half of the dressing over the salad and mix well. Set aside the remaining dressing.

Pat the tilapia fillets dry with paper towels. Season with salt and pepper.

Grill the tilapia for about 3-5 minutes on each side, or until the fish flakes easily with a fork.

Slice the remaining lime into wedges for serving.

Serve the grilled tilapia with the chickpea salad and lime wedges. Drizzle the remaining dressing over the fish before serving.
