This is a yummy grilled cheese with fruit. We use halloumi cheese and sweet peaches. We add fresh mint for a cool taste. It's cooked on a grill or pan. It's a little bit salty, sweet, and fresh!

Ingredients

4 ripe peaches, stoned and quartered

20 g fresh mint, roughly chopped

1/4 tsp red pepper flakes

400 g halloumi, cut into 1/2-inch slices

1 tbsp olive oil

1 tbsp honey

1 lemon, juiced

1/4 tsp sea salt

Method

Preheat your grill or cast-iron griddle pan over high heat.

Brush the halloumi slices with olive oil and place them on the grill. Cook for about 2 minutes on each side, or until they have nice grill marks.

While the halloumi is grilling, brush the peach quarters with a bit of olive oil.

Place the peaches on the grill, cut-side down, and cook for about 3 minutes, turning once, until they are charred and start to soften.

In a bowl, mix the grilled peach quarters with the chopped mint, red pepper flakes, lemon juice, honey, and sea salt.

Serve the grilled halloumi topped with the peach and mint mixture.
