Grilled Halloumi and Roasted Sweet Potato Salad recipe

This is a yummy salad with grilled cheese and sweet potatoes. It has nuts, herbs, and a tangy dressing. It's colorful and perfect for lunch or dinner. You cook the cheese and potatoes, mix them with other things, and eat!

Ingredients

600 g Sweet Potatoes
2 Cloves of Garlic
1 Red Onion
1 Bunch of Parsley
2 Lemons
250 g Halloumi Cheese
40 g Walnuts
2 tbsp Olive Oil
1/2 tsp Paprika
1/2 tsp Cumin
Salt
Pepper

Method

Preheat your oven to 200°C/400°F.

Peel and chop the sweet potatoes into bite-sized pieces. Place them on a baking tray lined with parchment paper. Drizzle with 1 tbsp olive oil, sprinkle with paprika, cumin, salt, and pepper. Roast for 30 minutes until tender and slightly charred.

While the sweet potatoes are roasting, thinly slice the garlic and red onion. Chop the parsley. Cut one lemon into wedges and juice the other.

In a small frying pan, toast the walnuts over medium heat until they start to brown and smell toasted. Remove from heat and let cool.

Heat a griddle pan over medium-high heat. Slice the halloumi into 1/2 inch thick pieces. Grill the halloumi for 2-3 minutes on each side until golden and grill marks appear.

In a bowl, whisk together the remaining 1 tbsp olive oil, lemon juice, salt, and pepper to create the dressing.

In a large bowl, combine the roasted sweet potatoes, sliced garlic, red onion, and half of the parsley. Pour over half the dressing and toss to coat.

Arrange the sweet potato mixture on a serving plate. Place the grilled halloumi on top and sprinkle with the toasted walnuts and the rest of the parsley.

Drizzle with the remaining dressing and serve with lemon wedges on the side.
