This is a yummy dinner with steak and spicy carrot noodles. You cook the steak on a grill and make noodles from carrots. Then you put herb oil on top for extra flavor. It's fun to make and tastes really good!

Ingredients

4 medium carrots
1 lb flank steak
1/2 tsp black pepper
1/2 tsp salt
1 tbsp olive oil
2 tbsp fresh parsley, chopped
1 tbsp fresh cilantro, chopped
1/4 tsp crushed red pepper flakes
1 clove garlic, minced
1/2 inch piece ginger root, minced
2 tbsp vegetable oil

Method

Wash, peel, and use a spiralizer to create carrot noodles. Place them in a bowl and set aside.

Preheat the grill to medium-high heat.

Season the flank steak with salt and pepper on both sides.

Grill the steak for 5-7 minutes per side for medium-rare, or until it reaches your desired level of doneness.

Remove the steak from the grill and let it rest for 5 minutes.

In a small bowl, combine minced garlic, minced ginger, parsley, cilantro, red pepper flakes, and olive oil to create the herb oil.

In a skillet over medium heat, warm the vegetable oil. Add the carrot noodles and sauté for 2-3 minutes until they are slightly softened but still have a crunch.

Remove the skillet from heat and drizzle half of the herb oil over the carrot noodles, tossing to coat.

Thinly slice the steak against the grain.

Divide the carrot noodles among plates, top with sliced steak, and drizzle the remaining herb oil over the steak.
